The solution lies in strategic menu architecture. I designed this specific dinner—featuring an array of make-ahead appetizers, a vibrant Ratatouille, and a classic Chicken Milanese—with one specific goal in mind: everything goes into the oven at exactly the same temperature right before we are ready to eat.

I prep the apps and freeze them. The shallot and white balsamic vinaigrette is blended days in advance. The chicken is pounded, coated in mustard and breadcrumbs, and flash-sautéed hours before the doorbell rings. The Ratatouille is fully assembled and chilling in the refrigerator.

Make-Ahead Chicken Milanese & Lemon Vinaigrette

The cornerstone of the 350-Degree Menu Strategy. This crispy, golden-brown Chicken Milanese and bright shallot vinaigrette can be completely prepped hours before your guests arrive, allowing you to finish the dish in the oven while you sip wine with your friends.

Ingredients
  

  • [4 boneless skinless chicken breasts]
  • [¼ cup Dijon mustard]
  • [1 cup seasoned breadcrumbs]
  • [2 tablespoons olive oil]
  • [2 tablespoons unsalted butter]
  • [1 small shallot minced]
  • [2 tablespoons fresh lemon juice]
  • [2 tablespoons white balsamic vinegar][1 teaspoon Dijon mustard] for the vinaigrette
  • [½ cup high-quality olive oil] for the vinaigrette[Kosher salt and freshly cracked black pepper to taste]

Method
 

  1. Make the Vinaigrette: This can be made several days in advance. In a food processor, blender, or mixing bowl, combine the minced shallot, lemon juice, white balsamic vinegar, and 1 teaspoon of Dijon mustard. Slowly stream in the ½ cup of olive oil while whisking or blending to emulsify. Season with salt and pepper. Cover and refrigerate.
  2. Prep the Chicken: Pound the chicken breasts between two sheets of plastic wrap until they are an even thickness to ensure they cook quickly and evenly.
  3. Dredge: Generously brush each side of the pounded chicken breasts with Dijon mustard, then thoroughly dredge them in the breadcrumbs until completely coated.
  4. Sauté: Heat the 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sauté the chicken just until the breading is golden brown and crispy on both sides (about 2-3 minutes per side). Transfer the chicken to a baking sheet. (Note: You can do this step a couple of hours in advance!).
  5. Finish and Serve: About 15 minutes before you are ready to eat, place the baking sheet in a preheated 350°F (175°C) oven. Bake for about 10 minutes until the chicken is cooked through. Serve topped with fresh greens and the prepared lemon vinaigrette.
