  • 1 lb large shrimp peeled and deveined
  • 1/2 lb andouille sausage, sliced
  • 1 cup chopped bell peppers
  • 2 cloves garlic minced
  • 2 cups Arborio or Bomba rice
  • 4 cups saffron-infused chicken stock
  • 1 cup fresh peas
  • Lemon wedges for serving

  • 1.5 lbs mixed seafood scallops, calamari, shrimp instead of meat
  • 1/4 cup extra virgin garlic-infused olive oil
