Caramel Toffee Cookie Dough Brownie Bars

Three indulgent layers—a chewy cookie dough foundation, a molten caramel heart, and a rich fudgy brownie crown—are studded with chocolate and toffee chips in these utterly irresistible bars. A testament to pure decadence, each bite promises a symphony of textures and sweet delights.

Ingredients
  

The Molten Caramel Center
  • 11 ounces caramels unwrapped
  • 14 ounces sweetened condensed milk 1 can
  • 4 tablespoons unsalted butter
The Cookie Dough Base
  • 2 ¼ cups unbleached all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup unsalted butter softened (2 sticks)
  • ¾ cup dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
The Oats & Baking Chips
  • 1 cup old-fashioned rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup caramel toffee chips
The Brownie Crown
  • 18.9 ounces premium brownie mix 1 box
  • Eggs and oil as required by box directions for fudgy texture

Method
 

Prep the Pan
  1. Preheat the oven to 350°F.
  2. Coat a 10 x 15-inch shallow baking dish with vegetable oil spray.
  3. Line the dish with unbleached parchment paper, allowing for an overlap on the sides to facilitate a clean lift.
  4. Spray the parchment surface lightly.
Melt the Caramel
  1. In a medium stainless steel saucepan over medium-low heat, combine the caramels, 4 tablespoons of butter, and sweetened condensed milk.
  2. Stir continuously for approximately 5 minutes until the caramels are entirely melted and the sauce is smooth and glossy.
  3. Remove from heat and set aside.
Mix the Cookie Dough
  1. In a ceramic bowl, whisk together the flour, baking soda, and salt.
  2. Using an electric mixer, cream 1 cup of butter with both sugars until the mixture is smooth and fluffy.
  3. Incorporate the eggs and vanilla, then add the dry flour mixture until just combined.
  4. Gently fold in the oats, chocolate chips, and caramel toffee chips to ensure even distribution.
The Brownie Preparation
  1. In a separate bowl, prepare the brownie batter according to the manufacturer’s directions for a "fudge-like" consistency.
Layer the Bars
  1. Press the cookie dough batter firmly into the bottom of the prepared baking dish to create an even base.
  2. Pour the warm molten caramel sauce evenly over the dough layer.
  3. Finish by spreading the brownie batter over the caramel, ensuring it reaches the edges to seal the center.
Bake & Cool
  1. Bake for 20 to 25 minutes until the brownies begin to set and the edges are slightly firm.
  2. For thicker bars in a 9x13-inch dish, increase the bake time by 5 to 10 minutes.
  3. Allow the slab to cool completely in the pan on a wire rack before using the parchment overlap to lift and cut into 24 uniform bars.
