Ingredients

Grilled Guacamole - Fresh Produce
  • 2 tablespoons olive oil
  • 2 medium ripe avocados, pit removed
  • 4 medium plum tomatoes, halved
  • ½ large red onion, peeled and cut into ½-inch rounds
  • 2 large jalapeño peppers, cut in half and seeded
  • 2 limes, cut in half
Grilled Guacamole - Seasonings
  • 6 cloves roasted garlic (see recipe)
  • 1 teaspoon ground chili powder
  • 1 teaspoon kosher salt
  • ½ teaspoon coarse ground pepper

Method

Grill the Ingredients
  1. Heat a grill pan over high heat.
  2. Drizzle with 2 tablespoons olive oil.
  3. Lay the avocado, tomatoes, onion, jalapeño peppers, and limes onto the grill pan, cut side down.
  4. Cook until you see grill marks, about 3 to 5 minutes.
  5. Flip everything and cook for about 2 to 3 minutes more. You want the onions to be fork tender and the rest of the food firm, but not mushy.
  6. Transfer everything to your work surface and let cool.
Mash and Assemble
  1. Scoop the flesh from the avocado into a bowl.
  2. Chop and add the tomatoes, onion, and jalapeños.
  3. Squeeze the juice of one lime into the bowl.
  4. Add the roasted garlic.
  5. Season with chili powder, salt, and pepper.
  6. Use a potato masher to combine to your desired consistency.
  7. The longer you mash, the smoother it will become.
  8. You can drizzle more olive oil into the mixture for added richness and more lime juice for extra smoothness.
