Blackberry Sage Fizz

A vibrant, jewel-toned sparkling refresher pairing sweet blackberries with Blood Orange–Sage Simple Syrup. Equally at home at a casual gathering or an elegant evening on the patio.

Ingredients
  

Blackberry Purée
  • 2 cups fresh blackberries (or thawed frozen blackberries)
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
Blackberry Sage Fizz
  • 1 cup Blackberry Purée
  • 1/2 cup Blood Orange-Sage Simple Syrup (You Can Cook Anything - Volume 5)
  • 1/4 cup fresh lemon juice
  • 2 1/2 cups chilled sparkling water
  • Ice (if serving in stemless glasses)
Garnishes
  • Fresh blackberries
  • Fresh sage leaves
  • Blood orange slices or lemon wheels

  • Fine mesh sieve
  • Large glass pitcher
  • Collins glasses

Method
 

Blackberry Purée
  1. Combine the blackberries, water, and lemon juice in a small saucepan over medium heat. Cook for 5 to 7 minutes, until the berries soften and release their juices.
  2. Transfer to a blender and purée until smooth. Strain through a fine-mesh sieve to remove the seeds.
  3. Chill before using. Makes about 1 cup.
Preparation
  1. In a large pitcher, combine the Blackberry Purée, Blood Orange-Sage Simple Syrup, and fresh lemon juice. Stir until well blended and refrigerate until thoroughly chilled.
  2. Just before serving, gently stir in the sparkling water.
  3. Pour into four chilled Collins glasses over ice, or serve in stemless wine glasses for a more elegant presentation. Garnish each glass with a few fresh blackberries, a small sage leaf, and a thin slice of blood orange. Serve immediately.

Notes

For the most beautiful presentation, use fresh blackberries when they're in season. Their deep purple color paired with the citrus and sage creates a stunning jewel-toned drink that's every bit as festive as a cocktail.
