Ingredients
  

Passion Fruit Simple Syrup
  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup passion fruit purée
  • 1 teaspoon fresh lime zest
  • 1 teaspoon vanilla extract optional
Spirits & Mixers
  • 1 1/2 cups light rum
  • 1 1/2 cups dark rum
  • 1 cup chilled sparkling citrus soda
  • Ice
Juices & Syrups
  • 1 cup passion fruit juice
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/2 cup Passion Fruit Simple Syrup
  • 2 tablespoons grenadine
Garnishes
  • Orange wheels
  • Lime wheels
  • Maraschino cherries
  • Fresh mint sprigs

Equipment

  • Hurricane glasses
  • Glass pitcher
  • Cocktail shaker
  • Citrus channel knife

Method
 

Syrup Preparation
  1. Simmer water and sugar in a small saucepan until dissolved. Add passion fruit purée and lime zest, simmer 5 minutes, add vanilla, cool and strain.
Cocktail Assembly
  1. Combine light rum, dark rum, passion fruit juice, orange juice, lime juice, Passion Fruit Simple Syrup, and grenadine in a pitcher. Refrigerate 2 hours.
  2. Stir in sparkling citrus soda just before serving.
  3. Fill Hurricane glasses with ice, pour cocktail over top, and garnish with orange wheel, cherry, and mint.
