Honey Simple Syrup
- Combine the honey and water in a small saucepan over medium heat. Stir until the honey dissolves completely.
- Add the thyme sprigs and simmer gently for 2 to 3 minutes. Remove from the heat and allow to steep for 15 minutes.
- Strain and cool completely. Refrigerate for up to 3 weeks.
Preparation
- In a small pitcher, combine the pear nectar, Honey Simple Syrup, and fresh lemon juice. Stir well and refrigerate until thoroughly chilled.
- Just before serving, gently stir in the sparkling water.
- Pour into four chilled Champagne flutes, or stemless sparkling wine glasses if serving over ice. Garnish each with a thin pear slice and a small sprig of fresh thyme. Serve immediately.
Notes
Use a high-quality pear nectar rather than pear juice. Nectar has a richer texture and fuller fruit flavor that gives this drink its elegant character. Chill every ingredient beforehand so the Sparkler stays crisp without needing much ice.
