Meyer Lemon–Lavender Iced Tea

Ingredients
  

Lavender Simple Syrup
  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons dried culinary lavender
Tea Base
  • 8 cups water
  • 6 black tea bags
  • 1 cup fresh Meyer lemon juice
  • 1/4 cup fresh lemon juice optional
  • 1/2 to 3/4 cup Lavender Simple Syrup
  • Ice
Garnishes
  • Thin Meyer lemon slices
  • Fresh lavender sprigs
  • Fresh mint leaves

Equipment

  • Small saucepan
  • Fine mesh sieve
  • Glass pitcher
  • Highball glasses
  • Citrus juicer

Method
 

Syrup Preparation
  1. Combine sugar, water, and lavender in a small saucepan. Bring to a simmer until sugar dissolves. Steep 20 minutes, strain, and cool completely.
Tea Assembly
  1. Bring water to a boil, remove from heat, add tea bags, and steep for 5 to 6 minutes. Remove tea bags and allow tea to cool slightly.
  2. Stir in Meyer lemon juice and Lavender Simple Syrup to taste. Refrigerate until thoroughly chilled.
  3. Serve over plenty of ice and garnish with lemon slices, mint, and lavender sprigs.
