Strawberry Rose Lemon Cooler

Ingredients
  

Rose Simple Syrup
  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons food-grade dried rose petals
  • 1 teaspoon rose water (optional, for a more pronounced floral flavor)

  • 1 1/2 cups fresh strawberries, hulled
  • 1/3 cup Rose Simple Syrup
  • 1/4 cup freshly squeezed lemon juice
  • 2 1/2 cups chilled sparkling water
  • Ice

  • Fresh strawberry slices
  • Lemon wheels
  • Fresh mint sprigs
  • Edible rose petals (optional)

Method
 

Rose Simple Syrup
  1. Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar has completely dissolved.
  2. Bring just to a gentle simmer, then remove from the heat. Stir in the dried rose petals and allow the mixture to steep for 20 to 30 minutes.
  3. Strain through a fine-mesh sieve, pressing gently on the petals to extract their flavor. Stir in the rose water, if using, and cool completely. Store refrigerated for up to 3 weeks.
Preparation
  1. Place the strawberries in a blender and purée until smooth. For an extra-silky drink, strain the purée through a fine-mesh sieve to remove the seeds.
  2. In a pitcher, whisk together the strawberry purée, Rose Simple Syrup, and fresh lemon juice until well blended. Refrigerate until thoroughly chilled.
  3. Just before serving, gently stir in the sparkling water.
  4. Fill four stemless wine glasses or tall Collins glasses with ice. Pour the cooler into the glasses and garnish with sliced strawberries, a lemon wheel, a sprig of fresh mint, and a few edible rose petals, if desired. Serve immediately.

Notes

Choose ripe, in-season strawberries whenever possible—they'll give the drink its naturally beautiful blush color and require less syrup. Freeze a handful of whole strawberries ahead of time and use them instead of ice cubes to keep the drink cold without diluting the flavor.
