  • ¾ cup fresh lemon juice
  • ½ cup Rosemary-Honey Simple Syrup
  • 4 cups chilled ginger beer
  • Ice

  • Lemon wheels
  • Fresh rosemary sprigs
  • Crystallized ginger, optional

Equipment

  • Small saucepan
  • Rocks glasses
  • Fine mesh strainer

Method

Syrup Preparation
  1. Combine the water and honey in a small saucepan over medium heat, stirring until the honey dissolves completely. Add the rosemary sprigs and simmer gently for 3 to 4 minutes. Remove from the heat and allow the rosemary to steep for 20 minutes. Strain into a glass jar and refrigerate for up to three weeks.
Cocktail Assembly
  1. Combine the bourbon, lemon juice, and Rosemary-Honey Simple Syrup in a large pitcher. Stir well and refrigerate until thoroughly chilled.
  2. Gently stir in ginger beer just before serving.
  3. Fill rocks glasses with fresh ice, pour the cocktail over the ice, and garnish each glass with a lemon wheel and a sprig of rosemary. Serve immediately.

Notes

Lucky Clover Sparkler (Alcohol-Free)
Replace the bourbon with:
• 2 cups sparkling apple cider
• or additional ginger beer
Prepare exactly as above and garnish with lemon and rosemary.
It's refreshing, festive, and just as enjoyable for every guest at the table.
Jorj's Tip
Prepare the bourbon, lemon juice, and syrup mixture a day in advance. Refrigerating the base overnight allows the citrus and rosemary to mellow beautifully. Add the ginger beer only moments before serving so the cocktail stays bright and sparkling.
Hosting a Crowd
For 20 guests, prepare:
• 5 cups bourbon
• 2 cups fresh lemon juice
• 1¼ cups Rosemary-Honey Simple Syrup
• 10 cups chilled ginger beer
Serve from a beverage dispenser or large pitcher with bowls of lemon wheels, rosemary sprigs, and crystallized ginger nearby. Guests can garnish their own cocktails between hands, making the bar part of the evening's fun.
