Ingredients
  

For the Aromatic Base
  • 2 tablespoons butter
  • 4 ounces spicy deli chicken such as Blazing Buffalo breast, diced
  • 1 small white onion peeled and finely diced
  • 4 celery ribs sliced thin
For the Cheese Emulsion
  • 2 8-ounce blocks cream cheese
  • 4 ounces grated sharp cheddar cheese about 1 cup
  • 4 ounces hot pepper sauce such as Frank's Red Hot
For Serving
  • Sturdy corn chips or scoop-style chips for dipping

Method
 

The Aromatic Base
  1. Heat the butter in a medium sauté pan or skillet over medium-high heat until melted and bubbling.
  2. Add the diced spicy chicken, white onion, and thinly sliced celery to the pan.
  3. Cook, stirring occasionally, until the vegetables are completely soft and translucent, about 3 to 5 minutes.
The Emulsion
  1. Reduce the heat to medium-low to protect the dairy from breaking.
  2. Add the blocks of cream cheese to the hot skillet, stirring continuously to allow them to gently soften and melt into the vegetables.
  3. Once the cream cheese is mostly melted, fold in the grated sharp cheddar cheese and the hot pepper sauce.
  4. Keep stirring the mixture continuously over the gentle heat until all the ingredients are perfectly melted together into a smooth, homogenous dip.
Serving & Holding
  1. Remove the skillet from the heat and serve immediately directly from the warm pan with sturdy corn chips.
  2. If prepping ahead for a party, carefully pour the finished dip into an elegant ceramic baking dish and keep warm in a low-temperature oven until kickoff.
