Ingredients

The Whole Chicken Extraction
  • 1 small (2 ½- to 3 ½-pound) chicken
The Aromatic & Starch Base
  • 2 to 3 tablespoons olive oil
  • 1 large russet potato, peeled and diced into ½-inch pieces, about 2 cups
  • 1 large onion, peeled and diced into ½-inch pieces, about 1 ½ cups
  • 2 to 3 celery ribs, sliced, about 1 cup
  • 2 to 3 large carrots, peeled and sliced, about 1 cup
  • 2 small jalapeño peppers, seeded, deveined, and diced, about ¼ cup
  • 6 to 8 garlic cloves, peeled and thinly sliced, about ¼ cup
  • 3 (1-inch) pieces fresh turmeric, peeled and sliced, about 3 tablespoons
The Seasoning & Finish
  • 2 teaspoons kosher salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon Tuscan spice blend (see recipe below)
  • 2 tablespoons fresh basil, chopped

Equipment

  • 1 Heavy-duty enameled cast-iron Dutch oven
  • 1 Sturdy wooden soup ladle
  • 1 Precision chef's knife
  • 1 Stainless steel shredding forks

Method

Boil the Chicken
  1. Rinse the chicken and discard any giblets hidden in the cavity.
  2. Submerge the bird into a pot of boiling salted water and cook until the meat pulls away from the bone, about 45 minutes.
  3. Remove the pot from the heat.
  4. Use two slotted spoons to transfer the chicken to a cutting board to cool. Carefully strain broth through a colander into a large bowl or pitcher.
Building the Aromatic Foundation
  1. Coat the bottom of the pot with olive oil.
  2. Add the vegetables and cook over medium-high heat until they begin to soften and turn golden, about 20 minutes.
Puree the Soup
  1. Pour the strained broth back into the pot.
  2. Season with salt, pepper, and the spice blend.
  3. Simmer the soup until the vegetables are very soft, about 20 minutes. Remove the pot from the heat, and cool the soup to room temperature.
  4. Use an immersion blender, food processor, or blender to make the soup creamy. Soft potatoes will create a texture much like creamed soup. If you want an even creamier texture, stir in a cup of half-and-half to the pot.
Add the Chicken & Serve
  1. While the soup is simmering, remove the meat from the bones of the chicken. Shred the chicken meat with two forks.
  2. Transfer the shredded chicken to the soup.
  3. Stir, taste, and adjust the seasonings.
  4. Garnish with fresh basil.
