Crispy Duck Fat Fries with Spiced Ketchup

The Strategy:

Cut peeled Idaho potatoes into strips and soak them in cold water for at least 30 minutes. Meanwhile warm tomato paste, brown sugar, vinegar, mustard, cinnamon, cloves and allspice with water until the sugar melts, season, and let the ketchup sit. Blot the potatoes dry, fry them in duck fat at 325Β° for 5 minutes, then again at 375Β° until golden, about 5 minutes more, and season with salt and pepper to serve with the ketchup.

If a great French fry is a small luxury, a duck fat fry is a full indulgence. Frying in rendered duck fat — the secret of the best Belgian and French bistros — gives potatoes an incomparable savory richness and an extra-crisp shell. Double-cooked for a fluffy interior and a shatteringly crunchy exterior, and served with a spiced homemade ketchup, these are the fries you make when ordinary just won't do. They are worth every bit of the splurge.

Why Duck Fat

Duck fat is the upgrade that changes everything. It has a high smoke point, so it fries hot and crisps potatoes beautifully, and it carries a deep, savory flavor that soaks subtly into every fry — a richness that vegetable oil simply cannot deliver. It is the not-so-secret ingredient behind the legendary fries of Europe's best bistros. Render or buy good duck fat, get it properly hot, and you are already most of the way to the finest fry you have made at home.

The Double Fry & Spiced Ketchup

The technique still matters. Soak and dry the cut potatoes, then fry them twice: a first gentle fry in the duck fat to cook them through, then a rest, then a second hot fry to crisp and color them into a deep golden crunch. Drain them on paper towels and salt them immediately. Serve them with a homemade spiced ketchup whose warm spice and tang cut the duck fat's richness. The result is a fry with a fluffy center, a crackling shell, and a savory depth that is unmistakable.

  • Duck fat for frying
For the Spiced Ketchup Base
  • 1 6-ounce can tomato paste
  • ΒΌ cup brown sugar
  • ΒΌ cup water
  • 2 tablespoons red wine vinegar
For the Ketchup Spices & Seasoning
  • ΒΌ teaspoon ground mustard
  • ΒΌ teaspoon cinnamon
  • β…› teaspoon ground cloves
  • β…› teaspoon ground allspice
  • ΒΌ teaspoon coarse salt, plus more for fries
  • ΒΌ teaspoon coarse black pepper

Equipment

  • 1 Heavy-duty deep skillet
  • 1 Stainless steel mesh spider strainer
  • 1 Candy thermometer
  • 1 Large metal baking sheet (lined with paper towels)
  • 1 Stainless steel colander

Method

Prep
  1. Peel the potatoes. Cut each potato lengthwise into 4 long slices. Cut each slice into 4 strips.
  2. Place the strips into a bowl of cold water for at least 30 minutes or overnight in the fridge.
The Ketchup Reduction
  1. For the ketchup, whisk together tomato paste, sugar, vinegar, mustard, cinnamon, cloves, and allspice in a small pan over low heat. Pour in ΒΌ cup water. Whisk until smooth.
  2. Cook until the sugar melts and the ketchup is warmed through, about 5 to 10 minutes.
  3. Season with salt and pepper. Set aside and let the flavors blend at room temperature or in the refrigerator overnight. The longer it sits, the better the flavor.
The First Fry
  1. Drain the potatoes through a colander and slide onto paper towels. Use more towels to blot the potatoes dry. The drier the potatoes, the more they will crisp.
  2. Pour oil into a deep skillet over medium heat to a depth of 1-inch. Use a candy thermometer to gauge the oil to 325Β°.
  3. Place the fries into the oil and cook for 5 minutes. This step cooks the inside of the potatoes.
  4. Transfer the fries to a baking sheet lined with paper towels. These precooked fries will keep in the fridge for several hours until you are ready to serve.
The Finish
  1. Raise the temperature of the oil to 375Β°.
  2. Place the partially cooked fries in the oil. Cook until golden, about 5 minutes more.
Season and Serve
  1. Transfer to a baking sheet lined with paper towels.
  2. Season with salt and pepper and serve with ketchup.

The Heart of the Table

To fry something as humble as a potato in something as special as duck fat, purely for the pleasure of the people at your table, is a lovely, generous indulgence. There is warmth in that kind of small luxury shared — a basket of the very best fries, made with care and a little decadence, set out to be devoured hot and happily by everyone.

The Art of the Host

A deep skillet, a thermometer, and good duck fat are what this asks. Get the fat properly hot for each of the two fries, soak and dry the potatoes thoroughly for crispness, and don't crowd the skillet. Save the strained duck fat after frying — it keeps and can be reused, which softens the splurge. Salt the fries the instant they leave the fat, and make the ketchup ahead.

Neighborly Grace

  • The Preparation: Like all double-fried fries, these are made for getting ahead: par-fry them in the duck fat hours in advance, hold them, and do the quick, hot second fry just before serving. The spiced ketchup keeps for days, and the strained duck fat can be saved and reused, so the luxury stretches further than you'd think.
  • The Pour: A glass of Champagne or a crisp Belgian ale nods to the bistro spirit of duck fat fries. For a non-alcoholic option, a sparkling apple cider or a cold cola cuts the savory richness.
  • The Vibe: This is an indulgent, bistro-worthy treat — pile the duck fat fries high with the spiced ketchup and serve them hot as a decadent side or a shareable centerpiece. It is comfort food elevated to a small luxury, best enjoyed with something bubbly.
