Ham Salad Spread Three Ways
A classic ham salad requires aggressive seasoning to cut through the heavy, salty richness of the meat. By utilizing a food processor to achieve a perfectly uniform, crumb-like texture, and cutting the heavy mayonnaise base with the sharp tang of yellow mustard and bright sweet pickle relish, you create a deeply flavorful, spreadable pate that is equally at home on a delicate cucumber cup as it is on a crisp artisan cracker.

Ingredients
Salad Base
- 8 ounces cooked ham (ham steak or deli ham), chopped
- 2 to 3 celery ribs, chopped, about 1 cup, plus more for serving
- 2 to 3 green onions, chopped, about ¼ cup
- 2 tablespoons sweet pickle relish
Dressing and Serving
Instructions
- Place the ham, celery, and onions into the bowl of a food processor. Pulse to combine into very small pieces about the size of crumbs, about 5 pulses.
- Add the relish, mayo, and mustard. Pulse to combine.
- Season with salt and pepper and pulse one last time.
- Spread the ham salad onto celery ribs. Scoop the centers from the cucumber rounds (leaving a border on the bottom to hold the salad). Fill the cucumber rounds with ham salad. Serve the remaining ham salad in a bowl to spread on crackers.
