Souped-Up Baked Beans

Ingredients
Bacon and Aromatics
- ½ pound bacon, diced, about 8 strips
- 1 medium onion, peeled and diced, about 1 cup
- 4 garlic cloves, peeled and minced, about 2 tablespoons
Beans
- 1 (15-ounce) can large navy beans, drained
- 1 (15-ounce) can black beans, drained
- 1 (15-ounce) can red kidney beans, drained
Sauce and Seasoning
- ½ cup brown sugar
- ¼ cup mustard
- ¼ cup molasses
- ¼ cup balsamic vinegar
- 1 teaspoon kosher salt
- 1 teaspoon coarse black pepper
Garnish
- fresh parsley, chopped
Instructions
- Preheat your oven to 325°.
- Place the bacon into the bottom of a Dutch oven or deep skillet with lid. Cook over medium-high heat until the bacon begins to crisp, about 2 to 3 minutes. Remove the bacon and drain on paper towels. You will use this later!
- Add the onion and garlic to the drippings in the bottom of the pan and cook until the onion is translucent, about 3 to 5 minutes.
- Add the beans, brown sugar, mustard, molasses, vinegar, salt, and pepper. Stir to mix everything together.
- Place the lid on the Dutch oven and place into the oven. Cook until the flavors combine and the beans are sugary and bubbling, at least 1 hour and up to 2.
- Garnish with the crisp bacon and a sprinkle of fresh parsley.
