Slow Cooker Fiery Beef and Black Bean Chili

Ingredients
For the beef
- 1 to 2 tablespoons olive oil
- 4 pounds ground beef (chuck, ground round, sirloin, or any combo)
- 1 teaspoon kosher salt
- 1 teaspoon coarse black pepper
For the vegetables and aromatics
- 1 medium red onion, peeled and diced, about 1 cup
- 1 red bell pepper, seeded and diced, about 1 cup
- 2 large garlic cloves, peeled and minced, about 1 tablespoon
- 1 to 2 chipotle peppers in adobo sauce, seeded and diced, about 1 tablespoon
- 1 (10-ounce) package frozen corn
For the chili base and spices
- 2 (28-ounce) cans diced tomatoes
- 2 tablespoons tomato paste
- 2 (16-ounce) cans black beans, drained
- 2 or more tablespoons chili powder
- 1 teaspoon ground cumin
For the toppings
- sour cream
- fresh cilantro, chopped
- ripe avocado, diced into ½-inch pieces
- ripe red tomatoes, diced into ½-inch pieces
Instructions
- Heat 1 tablespoon of the olive oil in a skillet over medium-high heat.
- Cook the beef in batches using additional oil as needed. Season with salt and pepper.
- Transfer the beef to your slow cooker.
- Add the diced onion, red pepper, garlic, chipotle peppers, corn, diced tomatoes, tomato paste, and black beans.
- Season with chili powder and cumin.
- Set the slow cooker on high for at least 4 hours or longer. After about 1 hour, stir the chili and adjust the seasonings by adding salt and pepper and additional chili powder if you like.
- Serve in bowls or mugs with toppings of sour cream, fresh cilantro, avocado chunks, and diced ripe tomatoes.
Thing to Note:
Thing to Note: Purchase chipotle peppers in adobo sauce in the can. These babies are hot! Take care in handling them. I seed them for this recipe, but if you like a lot of spice, chop 1 leaving the seeds intact and add it to the pot. Store the remaining peppers in an airtight container for up to several weeks in the fridge.
Another Thing to Note: If your slow cooker has a simmer setting, you can brown the beef in the slow cooker and eliminate the need for the skillet.
