Chocolate Swirl Sour Cream Banana Bread
Fold sour cream into a classic banana bread for an exceptionally moist crumb, then ribbon cocoa through the batter — the beloved banana bread given a decadent, marbled twist.
Banana bread is a kitchen staple for good reason, but this version elevates the humble banana bread into something a little decadent. Sour cream keeps the crumb exceptionally moist and tender, ripe bananas lend their sweetness, and a ribbon of rich chocolate swirled through the batter turns each wedge into a marbled beauty. It is the comforting banana bread everyone loves, dressed up just enough to feel like a treat — perfect for breakfast, an afternoon snack, or a not-too-sweet dessert.
The Moist Sour Cream Batter
Mash the ripe bananas and fold them into a batter enriched with sour cream for a bread that bakes up remarkably moist and tender. The sour cream is the secret here, lending both richness and a subtle tang, while the riper the bananas, the sweeter and more flavorful the bread — so let them go well past golden before you bake.
Swirling in the Chocolate
Pour half the batter into the pan, then stir the cocoa powder into what is left and spoon it over the top, drawing a knife through to marble the two. A gentle swirl keeps the two distinct for a beautiful marbled crumb — too much stirring blends them into one, so a few passes of the knife is all you need.

60 Minute Cuisine
The Batter
1 1/2 cup flour • 1 teaspoon baking soda • 1/2 teaspoon kosher salt • 1/2 teaspoon ground cinnamon • 1/4 teaspoon ground nutmeg • 1/2 cup butter, room temperature, 1 cup • 1 cup granulated sugar • 2 large eggs • 1/2 cup sour cream • 1 teaspoon vanilla extract • 3 very ripe bananas, mashed
The Chocolate Swirl
1/4 cup cocoa powder
Method
1. Preheat the oven to 350ยฐ. Whisk together the flour, baking soda, salt, cinnamon and nutmeg in a small bowl.
2. Whisk together the butter and sugar. Whisk in the eggs, one at a time. Mix in the sour cream and vanilla. Whisk in the mushy bananas.
3. Pour the flour on the top. Use a spoon or large whisk to combine all the batter ingredients.
4. Pour half of the batter into a 9 X 9 X 2-inch baking dish that has been coated with vegetable oil spray and dusted with flour.
5. Stir the cocoa powder into the remaining batter. Spoon the chocolate batter on top of the vanilla batter. Use a knife to cut through the batter, swirling the chocolate into the vanilla.
6. Bake until a tester inserted in the middle of the bread comes out clean, about 35 to 40 minutes. Cool in the pan and cut into wedges.
The Heart of the Table
Banana bread on the counter is quiet, everyday hospitality — it means there is always a slice to offer whoever wanders through. There is a homey generosity in this dressed-up version, decadent enough to feel like a treat yet comforting as ever, the kind of bread that makes a house feel warm and lived-in.
The Art of the Host
Use very ripe bananas for the best flavor, and swirl the chocolate gently so it stays marbled rather than blended. Cool the bread in the pan before cutting it so it holds together, and use a serrated knife for clean, marbled wedges.
