Chinese Hot Pot Made in the USA
The Strategy:
Gathering around a simmering pot of flavorful broth is a wonderful, slow-paced way to share a meal with loved ones. Preparing sweet ginger-soy and creamy peanut dipping sauces ahead of time sets the stage for a delicious, interactive dining experience. Simply arrange plates of thinly sliced beef, fresh vegetables, and tender noodles around the pot and let everyone cook their own bites.
Ingredients
Ginger Soy Sauce
- ½ cup soy sauce
- 2 teaspoons honey
- 2 teaspoons sesame oil
- Juice of 2 large limes, about ¼ cup
- 1 (1-inch) piece fresh ginger, peeled and grated, about 1 tablespoon
Peanut Sauce
- ½ cup creamy peanut butter
- Juice of 1 large lime, about 2 tablespoons
- 1 (1-inch piece) fresh ginger, peeled and grated, about 1 tablespoon
- 1 clove garlic, peeled and minced
- 2 tablespoons soy sauce
- 1 teaspoon light brown sugar
- ¼ teaspoon crushed red pepper
Broth
- 2 quarts homemade beef stock, or prepared low sodium broth
- 4 to 6 green onions
- 4 cloves garlic, peeled and thinly sliced
- 6 to 8 shishito peppers, chopped (substitute with mild green peppers)
- ½ teaspoon crushed red pepper
Dipping
- Chopped fresh cilantro
- 1 (12-ounce) sirloin beef steak, chilled, cut into very thin slices
- 1 pound fresh spinach or kale leaves, about 4 cups
- 1 medium head Bibb lettuce, leaves separated, about 4 cups
- 2 medium heads bok choy, separated into leaves, about 4 cups
- ½ pound fresh green beans, about 3 cups, ends trimmed
- ½ pound fresh assorted wild mushrooms, sliced, about 2 cups
- 5 to 7 medium carrots, peeled, trimmed and finely shredded, about 2 cups
- ½ pound medium fresh asparagus spears, about 16, sliced into 1-inch pieces, about 2 cups
- 1 pound thin wonton noodles
- 1 pound soba noodles
Instructions
Dipping
- Whisk together ½ cup soy sauce with honey, sesame oil, ¼ cup lime juice and 1 tablespoon fresh ginger in a small bowl.
- Set the ginger soy sauce aside.
- Place the peanut butter into the bowl of a food processor.
- Add 2 tablespoons lime juice, 1 tablespoon ginger, garlic, 2 tablespoons soy sauce, brown sugar and ¼ teaspoon crushed red pepper.
- Pulse to create a smooth paste. With the machine running, pour in ¼ cup water to thin the paste to dipping consistency.
- Pour the peanut sauce into a bowl and set aside.
- Heat the broth in an electric skillet over medium heat.
- Add green onions, garlic, shishito peppers and ½ teaspoon crushed red pepper.
- Bring the broth to a boil, and then reduce the heat, so that the broth simmers. Give each person a small bowl filled with some of each sauce.
- Place fresh cilantro on top of each bowl. Pass out the chopsticks!
- Place all the dipping ingredients around the electric skillet, containing the simmering broth. As the meal continues, the broth will absorb all the flavors of the food as they cook. This meal is meant to take some time and has an order to its chaos. Each person chooses one or two slices of beef and submerges it into the broth.
- Wait, wait, wait until the meat is cooked through, about 4 minutes. Use your chopsticks to remove the meat to your plate, dipping it in your sauce of choice along the way. Everyone takes turns placing ingredients into the broth.
- Cook veggies until leaves wilt, stems relax, and mushrooms plump.
- Cook noodles until they soften. Keep dipping, keep submerging. Throughout the meal the broth becomes rich and concentrated, changing the taste of the food from beginning to end.
