Stuffed Hasselback Potatoes

The Strategy:

Slicing potatoes thinly while keeping the base intact allows them to fan out into beautiful, accordion-like layers as they bake. Stuffing rich fontina cheese between the slices and basting with a savory garlic and celery-onion butter ensures flavor in every single bite. Bake until the skins are crispy, the insides are tender, and the cheese is melted and bubbly.

  • 4 large Idaho potatoes, scrubbed
  • 1 cup butter, 2 sticks
  • 4 garlic cloves, peeled and minced
  • 1 teaspoon Beau Monde seasoning
  • 1 teaspoon kosher salt

Raw cooking ingredients for Stuffed Hasselback Potatoes arranged beautifully on a clean kitchen counter.

Instructions

  1. Preheat the oven to 425°. Lay two wooden skewers parallel on your work surface.
  2. Place one potato lengthwise on the skewers.
  3. Cut thin slices in the potato from top to bottom. Your knife will hit the skewers before it cuts all the way through, giving you an intact potato with accordion-type slices.
  4. Place the sliced potato into a baking dish. Repeat this technique on the remaining potatoes.
  5. Melt the butter in a pot with the garlic and Beau Monde seasoning.
  6. Season with salt and pepper.
  7. Spoon some of the butter between the slices in the potatoes.
  8. Place shredded fontina cheese in between each slice.
  9. Pour the remaining butter over top of each potato and sprinkle with Parmesan cheese.
  10. Bake the potatoes until tender with the cheese melted, about 1 to 1 ½ hours depending on the size of your potato.
  11. Remove from the oven and garnish with crumbled bacon and fresh parsley.
