Stuffed Hasselback Potatoes

Ingredients
- 4 large Idaho potatoes, scrubbed
- 1 cup butter, 2 sticks
- 4 garlic cloves, peeled and minced
- 1 teaspoon Beau Monde seasoning
- 1 teaspoon kosher salt
- ½ teaspoon ground white pepper
- 4 ounces Fontina cheese, shredded, about 1 cup
- 2 ounces Parmesan cheese, grated, about ½ cup
- 4 slices bacon, cooked and crumbled
- Chopped fresh parsley
Instructions
- Preheat the oven to 425°. Lay two wooden skewers parallel on your work surface.
- Place one potato lengthwise on the skewers.
- Cut thin slices in the potato from top to bottom. Your knife will hit the skewers before it cuts all the way through, giving you an intact potato with accordion-type slices.
- Place the sliced potato into a baking dish. Repeat this technique on the remaining potatoes.
- Melt the butter in a pot with the garlic and Beau Monde seasoning.
- Season with salt and pepper.
- Spoon some of the butter between the slices in the potatoes.
- Place shredded fontina cheese in between each slice.
- Pour the remaining butter over top of each potato and sprinkle with Parmesan cheese.
- Bake the potatoes until tender with the cheese melted, about 1 to 1 ½ hours depending on the size of your potato.
- Remove from the oven and garnish with crumbled bacon and fresh parsley.
