Spiced Orange Mule
A Spiced Orange Mule is a non-alcoholic mocktail of orange, lime, and vanilla-orange syrup over ice in a copper mug, topped with ginger beer. The ginger beer is not a garnish decision, it is the recipe. Ale is soft and sweet and will leave you with soda; the brewed kind brings heat and bite, and that heat is the only thing standing between the sweetness and a drink that cloys. Buy the boldest you can find and keep it very cold.
A mule lives or dies on its ginger. The answer to a bright, grown-up drink is not more citrus. It is more ginger — and a copper mug cold enough to make the whole thing snap.
Ginger Beer, Never Ginger Ale
This is the one substitution that will sink the drink. Ginger ale is a soft drink flavored with ginger; ginger beer is brewed, and the good ones carry a genuine peppery burn at the back of the throat. That burn is doing the structural work here — it cuts the vanilla, dries out the orange, and gives the mule the adult bite it needs to stand beside a plate of real food. Stir it in gently and at the last possible moment, because ginger beer is more fragile than it looks.
The Copper Mug, and Why It Goes Straight Out
Fill the mugs to the brim with ice and let them stand while you mix; they frost on the outside almost immediately. Pour at the last moment and carry them straight out. That matters more here than in most drinks, because both the citrus and the ginger read brighter cold and muddier warm. Fill the mugs with ice first and let them stand while you mix. Then pour, garnish with orange and lime wheels, mint, and a piece of candied ginger if you have it, and serve while the frost is still on the metal.

Spiced Orange Mule
Ingredients
- 1 cup granulated sugar
- 1 cup water
- Zest of 1 large orange (removed in wide strips)
- 1 teaspoon pure vanilla extract (or 1/2 vanilla bean, split lengthwise)
- 1 cup chilled fresh orange juice
- 1/4 cup fresh lime juice
- 1/3 cup Vanilla-Orange Simple Syrup
- 2 cups chilled ginger beer
- Ice
- Orange wheels
- Lime wheels
- Fresh mint sprigs
- Candied ginger (optional)
Method
- Combine the sugar, water, and orange zest in a small saucepan over medium heat, stirring until the sugar dissolves.
- Bring just to a gentle simmer, then remove from the heat. If using a vanilla bean, add it now and steep for 20 minutes. If using vanilla extract, stir it in after the syrup has cooled slightly.
- Strain and refrigerate for up to 3 weeks.
- Fill four chilled copper mugs with ice.
- In a pitcher, combine the orange juice, lime juice, and Vanilla-Orange Simple Syrup. Stir well.
- Just before serving, gently stir in the ginger beer.
- Pour into the prepared mugs and garnish with an orange wheel, a lime wheel, a sprig of fresh mint, and, if desired, a piece of candied ginger. Serve immediately.
Notes
The Heart of the Table
This is the drink for a table with real food on it — a braise, a roast, something that has been in the oven since two o'clock. It is bright enough to cut through richness and warm enough to belong to cold weather, and it holds its own in a room where everyone else is drinking something serious. Nobody sipping this is settling for less.
The Art of the Host
Four copper mugs, a pitcher, and a small saucepan for the syrup. The Vanilla-Orange Simple Syrup keeps three weeks and the citrus base two days, so make both well ahead. For a larger group, a beverage dispenser and a bucket of ice with the ginger beer alongside works better than a pitcher — that way the bubbles go in glass by glass.
Hosting a Crowd
For 12 guests, combine:
Neighborly Grace
- The Presentation: Copper mugs filled to the brim with ice so they frost. An orange wheel, a lime wheel, a generous sprig of mint, and a piece of candied ginger on the rim when you have it.
- The Vibe: A cold night and a heavy table — the fire going, comfort food coming out, and a drink cold enough to cut straight through all of it.
- The Flourish: Cranberry Orange Mule: Add ½ cup cranberry juice for a festive holiday variation. Honey Citrus Mule: Substitute Honey Simple Syrup for the Vanilla-Orange Simple Syrup. Blood Orange Mule: Replace the orange juice with fresh blood orange juice for a deeper citrus flavor and gorgeous ruby color. Cocktail Option: Offer 1½ ounces of bourbon, vodka, or dark rum on the side for guests who would like to create their own spirited version.
