Pineapple Mint Cooler
A Pineapple Mint Cooler is a non-alcoholic mocktail of pineapple juice and coconut water with lime and mint syrup, topped with sparkling water. The coconut water is doing the unexpected work — faintly salty and barely sweet, it lengthens the fruit just enough to keep the drink from turning into a dessert. Everything is stirred rather than shaken, and the bubbles go in last. The base holds two full days, so the afternoon itself asks almost nothing of you.
Tropical drinks fail in one predictable way: they go heavy. Too much sweet fruit, too much cream, and by the second glass nobody wants a third. This one is engineered in the opposite direction — it is built to be the drink people are still holding at the end of the afternoon.
Mint Steeped, Not Muddled
Muddled mint bruises, and bruised mint turns grassy and bitter — fine for a drink built to order, disastrous for a pitcher that has to sit. Steeping the leaves in warm syrup for twenty to thirty minutes draws the cool mint oil into the sugar without bruising a leaf, and the syrup then keeps three weeks in the refrigerator. The mint in the glass at the end is a garnish and an aroma, nothing more. All the actual mint flavor is already in the drink.
Coconut Water Keeps It Light
A cup of coconut water against two cups of pineapple juice sounds like a small thing and is not. It carries a faint mineral salinity that reads as refreshing rather than sweet, and it lengthens the pineapple so the cooler drinks easily in the heat instead of coating the mouth. Add the lime for edge, the mint syrup for coolness, and chill it hard. Then the sparkling water at the last moment, and a rim of toasted coconut if you want the drink to announce itself before anyone tastes it.

Pineapple Mint Cooler
Ingredients
- 1 cup granulated sugar
- 1 cup water
- 1/2 cup loosely packed fresh mint leaves
- 2 cups chilled fresh pineapple juice
- 1 cup chilled coconut water
- 1/4 cup fresh lime juice
- 1/4 cup Fresh Mint Simple Syrup
- 2 cups chilled sparkling water
- Ice
- Fresh pineapple wedges
- Lime wheels
- Fresh mint sprigs
- Toasted coconut flakes (optional, for glass rims)
Method
- Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar dissolves completely.
- Bring just to a gentle simmer, then remove from the heat. Stir in the fresh mint leaves and allow the syrup to steep for 20 to 30 minutes.
- Strain, cool completely, and refrigerate in an airtight container for up to 3 weeks.
- Fill four tall glasses with ice.
- In a pitcher, combine the pineapple juice, coconut water, fresh lime juice, and Mint Simple Syrup. Stir well and refrigerate until thoroughly chilled.
- Just before serving, gently stir in the sparkling water.
- Pour into the prepared glasses and garnish each with a pineapple wedge, a lime wheel, and a generous sprig of fresh mint. Serve immediately.
Notes
The Heart of the Table
This is the drink for the party that starts in daylight and does not want to end — the cookout, the pool afternoon, the long stretch of hours where people need something in hand that will not wear them out. Light, cold, and endlessly drinkable is not a lesser ambition than strong. On a hot day it is the more generous one.
The Art of the Host
A small saucepan, a pitcher, and tall glasses. Both the Mint Simple Syrup and the base keep three weeks and two days respectively — so the day itself needs only ice, sparkling water, and a plate of toasted coconut for rimming. Toast the coconut shortly before guests arrive so it is still crisp when the glasses are rimmed.
Hosting a Crowd
For 12 guests, combine:
Neighborly Grace
- The Presentation: Tall glasses over ice, rimmed with toasted coconut when you have the time for it. A pineapple wedge on the rim, a lime wheel, and a genuinely generous sprig of mint — the aroma is half the drink.
- The Vibe: A hot afternoon by the water with music on and nobody wearing shoes — the cooler that keeps a long day going without anyone flagging.
- The Flourish: Mango Mint Cooler: Substitute half of the pineapple juice with mango nectar. Passion Fruit Cooler: Add ½ cup passion fruit purée for an island-inspired variation. Tropical Ginger Cooler: Add a splash of chilled ginger beer for a hint of spice. Cocktail Option: Offer light rum, coconut rum, or vodka on the side so guests can create their own tropical cocktail.
