Classic Whiskey Sour

The Strategy:

A Whiskey Sour is bourbon, fresh lemon, and just enough sugar to round the edges — three things in balance and nothing to hide behind. Two moves make it feel like it came from a good bar: use freshly squeezed lemon juice, never bottled, and if you want that silky white cap, dry-shake the egg white without ice first to build the foam, then shake again with ice to chill. Everything else is garnish.

The Whiskey Sour is one of those cocktails that seems too simple to get wrong and quietly is, most of the time. Bottled sour mix and a lazy pour have given it a bad name. Made honestly, with real lemon and a proper shake, it is one of the most welcoming drinks you can hand a friend.

The Dry Shake

The egg white is optional, but it is what gives a Whiskey Sour that velvety, lounge-quality foam, and the secret is to shake it twice. First shake the bourbon, lemon, syrup, egg white, and bitters with no ice at all, hard, for a full twenty seconds — this whips the egg white into foam. Then add ice and shake again to chill it down. Skip the dry shake and the foam never forms; do it and the drink arrives looking like it cost more than it did.

Fresh Lemon, Always

Fresh lemon juice makes or breaks this drink. Bottled juice carries a dull, flat, faintly bitter note that a cocktail this bare cannot cover, while fresh lemon is bright and clean and gives the sour its whole reason for being. Squeeze it the same day, and taste as you go — the balance of tart and sweet is a personal thing.

  • 3/4 ounce fresh lemon juice
  • 1/2 ounce simple syrup
  • 1 egg white optional
  • 2 dashes Angostura bitters
  • Ice

Method
 

Preparation
  1. If using egg white, combine bourbon, lemon juice, simple syrup, egg white, and bitters in a cocktail shaker without ice. Shake vigorously for 20 seconds to create foam.
  2. Add ice and shake again until well chilled.
  3. Strain into a rocks glass filled with fresh ice or a chilled coupe glass.
  4. Garnish with an orange wheel and a cherry.
