Ingredients

Jam

  • 1 tablespoon olive oil
  • 2 large onions, peeled and chopped
  • 2 tablespoons brown sugar
  • 1 ½-inch piece ginger grated, about 1 teaspoon
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon coarse black pepper
  • 1 tablespoon maple syrup
  • 2 teaspoons apple cider vinegar

Burgers

  • 1 tablespoon chopped fresh basil
  • 1 clove garlic, peeled
  • 1 ounce Parmesan cheese, grated, about ¼ cup
  • 1 (15-ounce) can navy beans drained and rinsed, divided
  • ½ cup panko breadcrumbs, divided
  • 1 large egg
  • 2 tablespoons butter
  • 4 hamburger buns, split
  • 2 tablespoons olive oil

Instructions

Maple Onion Jam

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Add the onions and cook until soft, about 5 minutes.
  3. Stir in the brown sugar, ginger, cardamom and cinnamon.
  4. Season with salt and pepper.
  5. Reduce the heat to low and cook until the onions are syrupy, about 20 minutes more.
  6. Stir in the syrup and vinegar.
  7. Cool the jam to room temperature.

Burgers & Assembly

  1. Place the basil, garlic and cheese into the bowl of a food processor.
  2. Pulse to combine.
  3. Add half of the beans, half of the breadcrumbs and the egg and pulse.
  4. Place the remaining beans into a bowl and mash with a potato masher. Scrape the bean mixture from the food processor into the bowl of mashed beans.
  5. Season with salt and pepper.
  6. Mix well. Use wet hands to form the bean mixture into four ¾-inch patties.
  7. Place the remaining bread crumbs onto a plate.
  8. Coat each patty with the crumbs.
  9. Place the bean patties into the fridge to chill for 10 minutes.
  10. Heat the butter in a large skillet over medium heat.
  11. Place the buns, cut side down into the skillet to toast.
  12. Transfer the buns to a platter.
  13. Pour 2 tablespoons olive oil into the skillet.
  14. Cook the bean burgers in the skillet until golden brown on one side, about 3 to 4 minutes. Carefully flip the burgers and cook until golden on the other side, about 4 minutes more.
  15. Place the burgers onto the buns and top with maple onion jam.
