Ingredients

  • 1 large russet potato
  • 1 large sweet potato
  • 2 large beets, peeled
  • 1 large parsnip, peeled
  • Canola oil for frying
  • 1 tablespoon sea salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon Herbs de Provence
  • ½ teaspoon coarse black pepper
  • 2 whole heads garlic
  • 2 tablespoons olive oil, divided
  • 2 tablespoons butter
  • 2 large yellow onions, thinly sliced, about 4 ½ cups
  • 1 cup sour cream
  • 1 cup homemade or prepared mayonnaise

Instructions

  1. Use a mandoline to cut the potatoes into very thin slices. Transfer the slices into a bowl of cold water. Remove the slices from the water to paper towels and pat dry completely. Use the same technique with the remaining veggies.

  5. Sprinkle the seasoning over the chips. Continue with the other veggies. Place the baking sheet into the oven for 10 to 15 minutes. The chips will dry out and crisp up. Place the chips into an airtight container for up to 2 days.
  6. Roasted Garlic Onion Dip Preheat the oven to 350°. Cut the top third from the garlic heads. Drizzle with a bit of olive oil and season with salt and pepper. Wrap the garlic heads in aluminum foil leaving a small opening at the top. Bake until the cloves are golden and are popping from their skins, about 45 minutes.
  7. Heat the butter and remaining olive oil in a skillet over medium heat. Add the onions and cook until soft and brown, about 20 minutes. Season with salt and pepper. Cook to room temperature.
  8. Place the sour cream and mayonnaise into the bowl of a food processor. Squeeze the garlic from their skins and place in the bowl. Add the caramelized onions and pulse to combine. Serve at room temperature.
