One of my absolute favorite treasures to order off the menu at my local Cuban restaurant is the lightly breaded, fried béchamel fritter platter. Generously studded with salty, deeply smoked ham, these Croquetas de Jamón completely transform a standard dinner into an unforgettable spread. Unlike their strictly Southern cousin, the hush puppy, these delicate culinary gems are fundamentally way too delicious to ever purposefully slip under the table to the dog.

A Tapas Tradition

I originally uncovered the robust magic of the croquette during an incredible, sprawling tapas crawl across Spain. There was an undeniable rhythm to ordering small, intensely flavorful plates paired perfectly alongside an ice-cold local beer or a chilled glass of dry white wine. When I returned stateside, I knew immediately that I fundamentally needed to weave that exact same relaxed, vibrant energy into my own catering menus.

That brief minute submerged in hot oil perfectly binds a shatteringly crunchy golden exterior to an incredibly melty, molten core.
