  • 1 cup granulated sugar
  • 1 cup water
  • 1/2 cup loosely packed fresh mint leaves

  • 2 cups chilled fresh pineapple juice
  • 1 cup chilled coconut water
  • 1/4 cup fresh lime juice
  • 1/4 cup Fresh Mint Simple Syrup
  • 2 cups chilled sparkling water
  • Ice

  • Fresh pineapple wedges
  • Lime wheels
  • Fresh mint sprigs
  • Toasted coconut flakes (optional, for glass rims)

Method
 

Fresh Mint Simple Syrup
  1. Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar dissolves completely.
  2. Bring just to a gentle simmer, then remove from the heat. Stir in the fresh mint leaves and allow the syrup to steep for 20 to 30 minutes.
  3. Strain, cool completely, and refrigerate in an airtight container for up to 3 weeks.
Preparation
  1. Fill four tall glasses with ice.
  2. In a pitcher, combine the pineapple juice, coconut water, fresh lime juice, and Mint Simple Syrup. Stir well and refrigerate until thoroughly chilled.
  3. Just before serving, gently stir in the sparkling water.
  4. Pour into the prepared glasses and garnish each with a pineapple wedge, a lime wheel, and a generous sprig of fresh mint. Serve immediately.

Notes

For an extra-special presentation, lightly rim the glasses with lime juice and dip them in toasted coconut before filling. It's a simple touch that instantly transports guests to the tropics.
