CHILLED SPREADS & DIPS » MAKING MAYO SALAD-Y THINGS
The Strategy

Some of the best salads are made with mayo, and they're a fabulous way to use your leftovers. Tuna, leftover chicken or deli ham all work, and you can mix in whatever you like: cornichons, bell pepper, a little vinaigrette and herbs for a Mediterranean tuna salad, or fresh thyme, almonds, grapes and a little curry with chicken. Anything you add makes your mayo salad-y thing yours.

Technique Summary

Put leftover deli ham in a food processor with white onion, celery and pickle relish and let it do all the chopping. Add mayonnaise a little at a time and mix until it's just the way you like it.

Chef's Checkpoints

  • The amount you chop tells you how much salad you'll have, and that tells you how much mayonnaise to add.
  • Add some mayonnaise, mix, and add more only if you want it. You can always add, but you can't always subtract.
  • The same method works with tuna, chicken or almost any leftover.
