Making pizza snacks

PIZZA & FLATBREADS » MAKING PIZZA SNACKS
The Strategy

When you have extra pizza dough, you can make all kinds of snacks. A little mozzarella, a slice of pepperoni and a bit of sauce folded into a circle of dough turns into a little pizza snack. Topping them with Parmesan before baking turns them nice and golden.

Technique Summary

Cut circles from rolled-out extra pizza dough, fill each with mozzarella, pepperoni and a little sauce, then fold the dough over and crimp the edges with the tines of a fork. Brush with olive oil, top with Parmesan, bake at 400 degrees for about eight minutes, and serve with extra marinara for dipping.

Chef's Checkpoints

  • Crimp all the way around with the tines of a fork to seal it all up.
  • Brush with olive oil and top with Parmesan before they go in the oven.
  • After about eight minutes at 400 degrees, they should be baked and golden brown.
