There is a distinct, visceral shift in the energy of a room when you hand a guest a beautifully crafted cocktail at the door. For the Estate Library's signature welcome drink, we rely on the aggressive acidity of fresh pomegranate juice rounded out by Chambord, finally topped with dry champagne. Always use a dry Brut or tart Prosecco to ensure the drink remains bright, not cloying.

Ingredients
  

  • 1 750 ml bottle dry Champagne or Prosecco, chilled
  • 12 ounces fresh pomegranate juice
  • 2 ounces Chambord raspberry liqueur
  • Juice of 1 large lime
  • Fresh pomegranate arils for garnish

Method
 

The Mix
  1. In a large pitcher, carefully whisk together the pomegranate juice, Chambord, and fresh lime juice.
The Pour
  1. Divide the fruit mixture evenly among champagne flutes. Top generously with the icy Champagne.

  1. Drop a few fresh pomegranate arils into each glass to provide texture and visual lift. Serve immediately.
