- Crack the eggs into a bowl. Use a whisk to break the yolks. Whisk in the milk until the eggs are pale-yellow and frothy, about 1 to 2 minutes.
- Melt the butter in a small skillet over medium heat. Once the butter is melted and bubbling, pour in the eggs. Reduce the heat to low and continue to slowly whisk the eggs in the pan.
- While you move the eggs around in the pan, they will slowly form small curds, little lumps of cooked egg. This is exactly what you want.
- Season the eggs with salt and pepper.
- Cook the eggs until your desired amount of doneness. I like my eggs still on the liquid, runny side. This takes about 2 to 3 minutes. But, if you like yours medium to more hard-cooked, keep on whisking and cooking. That’s it!
