- 1 pint fresh strawberries, stems removed, chopped, about 2 cups

- 8 ounces mascarpone cream
- 1⁄2 cup heavy cream
- 1⁄4 cup powdered sugar

- 2 cups unbleached all-purpose flour
- 3 tablespoons granulated sugar
- 1 tablespoon cocoa powder
- 2 teaspoons baking powder
- 1⁄2 teaspoon kosher salt

- 1 1⁄2 cups buttermilk, room temperature
- 2 large eggs
- 4 tablespoons butter, melted, 1⁄2 stick
- 2 teaspoons vanilla extract
- 1⁄2 teaspoon apple cider vinegar
- several drops of natural red food coloring
Instructions
- Preheat a waffle iron according to the manufacturer’s directions.
- Pour the maple syrup into a pot over medium-high heat. Stir in the strawberries. Simmer until the strawberries are soft and begin to break down, about 5 to 7 minutes. Reduce the heat to low and keep the syrup warm.
- Use an electric mixer to combine the mascarpone, heavy cream, and powdered sugar in a medium bowl until soft and creamy.
- Whisk together flour, granulated sugar, cocoa powder, baking powder, and salt in a large bowl.
- Whisk together the buttermilk, eggs, melted butter, vanilla extract, vinegar, and red food coloring in a separate bowl.
- Pour the wet ingredients into the dry ingredients and combine.
- Pour the batter into the waffle iron and cook until crisp on the outside and fluffy on the inside.
