- Preheat a waffle iron according to the manufacturer’s directions.
- Place the grape jelly into a pot over medium heat. When the jelly thins and is runny, about 5 minutes, stir in the cornstarch and water. Simmer over low heat until the jelly is syrupy, about 3 to 5 minutes more. Keep the syrup warm over low heat.
- Use an electric mixer fitted with a whisk attachment to whip the cream, peanut butter, and powdered sugar in a chilled bowl until the cream gets thick and soft peaks form.
- Whisk together flour, granulated sugar, cocoa powder, baking powder, and salt in a large bowl.
- Whisk together the buttermilk, eggs, melted butter, and vanilla extract in a smaller bowl.
- Pour the wet ingredients into the dry ingredients and combine.
- Pour the batter into the waffle iron and cook until crisp on the outside and fluffy on the inside.
- Top each waffle with a dollop of peanut butter cream and a drizzle of warm grape jelly syrup.
