Ingredients

Instructions
- Whisk the pancake mix ingredients together in a large bowl.
- Whisk the milk, egg, melted butter, and vanilla in a separate bowl until smooth.
- Make a well in the center of the dry ingredients. Whisk the wet ingredients into the dry ingredients until the batter is just smooth. Having a couple of lumps in the batter is just fine!
- Heat a griddle over medium-high heat. (You can also use a large, non-stick skillet.) Reduce the heat to low and melt a tablespoon of butter on the grill. Use a paper towel to wipe off the excess so there is a sheer coating of butter.
- Ladle about 1⁄4 to 1⁄2 cup of batter on the grill. Cook until bubbles form on the top of the cake, and the bottom is golden brown, about 3 minutes. Flip and cook on the other side, about 3 minutes more.
- Serve with melted butter and warm maple syrup.
Here’s where it gets fun. After you ladle the batter onto the griddle, you can add your favorite things to your pancakes. Mini chocolate chips; blueberries; or other fruits, nuts, sprinkles, and spices like cinnamon and ginger are just a couple of ideas. You can also drizzle your baked cakes with your favorite syrup, honey, or glaze.
