- Lay a slice of ham or turkey on your work surface. The meat should be thick enough to spread with pimento cheese without splitting. If the meat you have is thinner than this, layer two slices together.
- Spread pimento cheese over the ham slice.
- Place either half an asparagus spear or a slice of roasted pepper on the bottom end of the slathered ham slice and then roll it up!
- Use a sharp knife to cut the roll into 1⁄2-inch slices. There you have it ... a pimento cheese pin wheel. Bet you can’t eat just one!
You can also wrap your cheese in a soft tortilla. Lay the tortilla on your work surface. Spread with cheese. Top with slices of ham or turkey and layer with asparagus and thin slices of red pepper. Wrap it all up and slice into pinwheels. It is a slightly heavier presentation, but just as delicious.
