Roasted Sausage over Lentil and Butternut Squash Stew

By simmering earthy French green lentils slowly until tender and folding in sweet, vibrant cubes of butternut squash and a touch of warm cumin, you create a complex, velvety base. Crowning this magnificent stew with simple, oven-roasted sausages not only adds a wonderful savory depth but turns an ordinary weeknight dinner into an exceptionally comforting feast.

Ingredients
Sausage and Lentil Aromatics
- 6 to 8 sausage links
- 1 medium onion, peeled and halved, divided
- 9 garlic cloves, 3 peeled, and 6 cloves peeled and minced
- 1 large carrot, cut into chunks, about 1 cup
Lentil Stew Base
- 1 pound French green lentils, rinsed, about 2 ¼ cups
- 3 tablespoons olive oil
- 1 jalapeño pepper, seeded, deveined, and finely chopped, about 2 tablespoons
- 1 medium butternut squash, peeled, seeded, and cut into ½-inch cubes, about 3 to 4 cups

Instructions
- Preheat your oven to 375°.
- Place the sausages into a baking dish coated with vegetable oil spray. Bake until the sausages cook through, about 20 to 25 minutes.
- Place 1 onion half, 3 cloves garlic, carrot, and lentils into a deep pan. Cover by 2 inches with cold water. Bring to a boil over high heat, then reduce the temperature to medium-low and simmer until the lentils are tender, about 25 to 30 minutes. Drain and discard the onion, garlic, and carrot.
- In a deep casserole or Dutch oven, heat the olive oil over medium-high heat. Finely chop the second onion half and add to the pan. Cook until the onion is soft, about 3 to 4 minutes.
- Add the 6 cloves of minced garlic, jalapeño, and squash. Season with cumin, paprika, salt, and pepper. Cook until the squash begins to brown, about 5 minutes.
- Pour in the stock and tomatoes. Reduce the heat and simmer until the squash is tender, about 8 to 10 minutes more.
- Stir in the lentils. Season with lemon juice. Transfer the lentil stew to a large shallow bowl.
- Slice the sausage links and place on top of the lentil stew.
