Ingredients
For the pickling brine
- 2 cups white wine vinegar
- 1 cup granulated sugar
- 2 tablespoons kosher salt
- 4 garlic cloves, peeled and minced, about 1 tablespoon
- 2 teaspoons peppercorns
- 2 bay leaves
- 1 teaspoon ground turmeric
- 1 (2-inch) piece ginger, peeled and grated, about 2 tablespoons
For the pickles
- 2 tablespoons fresh dill, chopped
- 8 pickling cucumbers, cut into spears
- 1 large red bell pepper, seeded and deveined, cut into strips
Instructions
- Pour the vinegar into a deep saucepan.
- Add 2 cups water. Stir in the sugar, salt, garlic, peppercorns, bay leaves, turmeric, and ginger.
- Bring to a boil over medium-high heat, reduce the heat to medium-low, and simmer for 2 or 3 minutes. Remove the pan from the heat, stir in the dill, and cool the brine to room temperature.
- Lay the veggies into a jar or an airtight container. Pour the cooled brine over all. Refrigerate for at least four hours and keep for up to 2 weeks.
