Ingredients
For the lamb
- 2 (1 ½- to 2-pound) racks of lamb
For the pesto herbs and cheese
- 1 bunch basil leaves, about 1 cup
- 1 bunch spinach leaves, about 1 cup
- 2 ounces Parmesan cheese, grated, about ½ cup
For the pesto seasonings and oil
Instructions
- Preheat your oven to 450°.
- Trim the lamb racks of excess fat.
- Add the basil, spinach, Parmesan, and garlic to the bowl of a food processor. Pulse to chop.
- Add the mustard and Worcestershire and season with salt and pepper. Pulse to combine again.
- With the machine running, slowly pour in the olive oil to make a paste.
- Use very clean fingers to smear the lamb racks with the paste.
- Stand the lamb racks up together by intertwining the bones and laying the meaty parts down onto a baking sheet.
- Bake until the internal temperature of the chops is 125° to 130° for medium-rare, about 15 to 20 minutes, depending on the thickness.
- Use a very sharp knife to cut through the racks, making 4 double chops.
