- 4 (4- to 6-ounce) trout fillets
- 1 teaspoon kosher salt
- ½ teaspoon coarse black pepper
- 12 fresh sage leaves
- 4 thin slices prosciutto, cut into 8 thin strips, about 2 ounces
- 2 tablespoons olive oil
For the Veronique sauce

Make and cook fish
- Lay the trout, skin side down, onto your work surface and season with salt and pepper.
- Arrange the sage leaves over the trout.
- Wrap the prosciutto around the fish and press to seal.
- Heat the olive oil in a skillet over medium-high heat.
- Add the trout fillets, flesh side down, to the oil and cook until the fish begins to brown, about 2 minutes. Flip and cook for 1 minute more. Use a fish spatula (or 2 regular spatulas) to transfer the trout to a platter.
Make Véronique sauce
- Add the shallot to the skillet and cook until softened, about 1 minute.
- Add the grapes and wine.
- Simmer until the wine reduces by half.
- Pour in the chicken stock and add the lemon slices.
- Simmer and reduce by half, about 8 to 10 minutes total.
- Turn off the heat and swirl in the butter.
- Season the sauce with salt and pepper.
- Ladle the sauce over the fish—don’t be afraid to be generous, making sure to use every last drop.
