Ingredients
For the marinade
- 2 tablespoons olive oil
- zest from 2 large limes, about 2 teaspoons, then cut the limes into thin pinwheel slices
- juice from 1 large lime, about 2 tablespoons
- 2 cloves garlic, peeled and finely chopped, about 1 tablespoon

Instructions
- Preheat your oven to 450°.
- Add a rack into a large baking dish or baking sheet with rim.
- Stir together the olive oil, lime zest, lime juice, and garlic.
- Make three diagonal incisions from the skin to the bone on each side of the fish.
- Season the outside and cavity of the snapper with the lime mixture and then with salt and pepper. Lay the fish on the rack.
- Add the chili, lime slices, and rosemary sprigs into the cavity and around the fish.
- Roast until the inside of the fish is opaque, about 8 minutes per inch of thickness of the fish, about 20 minutes total.
