Dutch Oven Cinnamon Raisin Bread

Ingredients
For loaf
- 3 ¼ to 3 ¾ cups unbleached all-purpose flour, plus more for kneading
- 1 (.25-ounce) package instant dry yeast, 2 ¼ teaspoons
- 1 teaspoon kosher salt
- 2 tablespoons granulated sugar
- 1 large egg, beaten
- 1 cup raisins
- 1 cup milk, warmed
For filling
- 6 tablespoons butter, cut into small pieces
- ½ cup brown sugar
- ¼ cup unbleached all-purpose flour
- 2 tablespoons cinnamon
Instructions
Make the dough
- Whisk together the flour, yeast, salt, sugar, and egg in the bowl of an electric mixer. Add the raisins. Pour in 1 cup warm milk. Mix everything together with a spatula to form a shaggy dough.
- Using the dough hook attachment, start the mixer on low speed and mix until the dough becomes smooth and pulls away from the side of the bowl. This will take several minutes. You can increase the speed as the flour works itself into the dough. If the dough is too sticky, add a small amount of flour a little bit at a time.
- Once the dough begins to wrap around the hook, increase the speed to high and knead for 5 minutes.
- Form the dough into a ball and set it in a bowl that has been coated with vegetable oil spray. Roll the dough around in the bowl to coat all sides.
- Cover with a clean dish towel and move to a warm place to double in size, about 1 hour.
Fill and shape
- Preheat your oven to 425°.
- Place the filling ingredients into the bowl of a food processor. (A mini one is perfect for this!) Pulse to form a thick paste.
- Punch down the dough. Form the dough into a ball. Remove the dough to a lightly flour-dusted surface.
- Use a rolling pin to flatten the dough and roll it into a rectangle. Spread ¾ of the filling over the dough. Fold the dough, envelope style, starting with bottom to center. Sprinkle the flap with more paste. Now fold the top to center. Spread with remaining paste.
- Now start at the narrow end and roll the dough up into a cylinder. Use your hands to gently shape dough into a round loaf.
- Place back into the bowl, cover, and let it rest for 30 minutes.
Bake the bread
- During those same 30 minutes while your dough is resting, put a Dutch oven with lid into the oven and heat it.
- Transfer the dough to a piece of parchment paper.
- Carefully, using potholders, remove the Dutch oven from the oven. It will be HOT. Transfer the dough with the parchment paper to the pan. Cover with the lid.
- Place the Dutch oven back in the oven and bake for 30 minutes.
- Remove the lid and reduce the heat to 400°.
- Bake until the top of the bread is golden, about another 5 to 10 minutes depending on how deeply golden brown you like your crust.
- Remove the loaf from the oven. Slide the bread out of the Dutch oven.
- Remove the parchment paper and cool the loaf on a rack for at least 30 minutes before slicing.
