- 2 large eggs
- 1 cup granulated sugar
- 1 cup sour cream
- ½ cup vegetable oil
- 1 teaspoon vanilla
- juice of 1 large Meyer lemon, about ¼ cup
- zest from 1 Meyer lemon, about 1 tablespoon
For blueberries and topping
- 2 pints fresh blueberries
- 1 teaspoon cornstarch
- confectioners’ sugar for dusting
Instructions
Make batter
- Preheat your oven to 375°.
- Whisk together the flour, baking powder, nutmeg, and salt in a small bowl.
- Use an electric mixer to combine the eggs with the granulated sugar until fluffy and pale yellow in color.
- Mix in the sour cream, oil, and vanilla.
- Stir in the lemon juice and zest.
- Add 1/3 of the dry ingredients to the bowl. Stir to combine. When just incorporated, stir in about another 1/3. When this is mixed in, add the remaining dry ingredients and stir just a bit longer. You want all the dry ingredients incorporated, but you don’t want to overmix the batter.
Assemble and bake
- In a separate bowl, toss the blueberries in the cornstarch.
- Pour half of the batter into a 9-inch springform pan lined with parchment paper.
- Sprinkle in half of the blueberries.
- Pour the remaining batter on top and sprinkle in the rest of the blueberries.
- Bake until a tester inserted into the cake comes out with crumbs (you will also see melted blueberries, but you should see crumbs rather than batter), about 50 to 60 minutes.
Finish and serve
- Transfer the cake to a rack to cool for 10 to 15 minutes.
- Remove the sides of the pan and sprinkle the cake with confectioners’ sugar.
