Make custard base
- Whisk together the milk and cream in a saucepan over medium heat.
- Stir in the vanilla.
- Cook until the mixture just begins to simmer.
- Whisk together the egg yolks, sugar, and salt.
- Continue whisking as you pour about ½ cup of the warm milk mixture into the egg yolks.
- Pour the egg-milk mixture back into the pan and continue cooking until the custard thickens enough to coat the back of a spoon, about 6 to 8 minutes.
Chill and churn
- Pour the custard through a sieve or fine mesh strainer into a bowl. This will filter out any cooked bits of egg.
- Place this bowl into a larger bowl filled with ice cubes and stir the custard occasionally.
- Once the custard cools (this can take 20 to 30 minutes), pour into an ice cream machine.
- Churn the ice cream according to the manufacturer’s directions.
- Transfer to an airtight container and chill further in the freezer for at least 2 to 3 hours.
