Carrot, Zucchini, and Apple Muffins
Setting a cozy, inviting tone in our kitchen begins with the slow-paced baking of Carrot, Zucchini, and Apple Muffins, letting the sweet scent of baking dough and warm spices fill the kitchen with anticipation, which turns kitchen preparation into a shared pleasure and a welcoming ritual. The application of dry heat locks the structure of the dish by coagulating proteins, creating a tender crumb while browning surface carbohydrates for rich flavor. The resulting centerpiece is a stunning, warm invitation for a party of eight, blending quiet luxury with the nostalgic pleasure of sharing a beautifully prepared treat.
A food processor makes small work of shredding the fruit and veggies for this recipe. Each muffin is dense, dark and filled with everything you desire with your steaming cup of java.
Carrot, Zucchini, and Apple Muffins
Ingredients
- 4 medium carrots, peeled, trimmed and finely shredded, about 2 cups
- 1 small zucchini, finely shredded, about 1 cup
- 1 large apple, peeled, cored and shredded, about 1 cup
- 2 cups unbleached all-purpose flour
- 1 cup pastry flour
- 2 teaspoons baking soda
- Zest of 1 medium orange, about 2 teaspoons
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon table salt
- 1 cup light brown sugar
- 3 large eggs
- 1 cup canola oil
- Confectioners' sugar
- 1 cup fresh cherries, pitted with stems removed
- ¾ cup granulated sugar
- Zest of 1 medium orange, about 2 teaspoons
- ¾ cup unbleached all-purpose flour
- ¾ cup chopped walnuts, about 3 ounces
- ¼ cup brown sugar
- 6 tablespoons butter, melted
- 2 cups unbleached all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon table salt
- 1 ½ cups butter, room temperature, 3 sticks
- 1 cup granulated sugar
- 4 large eggs
Instructions
- Preheat the oven to 375°. Line a 12-cup muffin pan with paper baking cups.
- Stir together carrots, zucchini, apple, all-purpose and pastry flour, baking soda, orange zest, cinnamon, nutmeg and table salt. Whisk together the light brown sugar, eggs and oil in a separate bowl. Fold the wet ingredients into the flour and veggies until just combined. Use a 3-inch ice cream scoop to dollop the muffin batter into the lined muffin cups.
- Bake until a tester inserted into the center of the muffin comes out clean, about 20 to 25 minutes. Remove the muffins to a rack to cool. Dust muffin tops with confectioners' sugar.
- World's Best Cooking Tools Well, there's nothing more fun than peeling apples with a "new fangled" Apple and Potato Peeler.
- Just a few turns of the handle creates a long, continuous peel. A quick push, and the apple core is removed, and the fruit sliced! If you don't have one, don't fret. You can use a simple apple corer device, or a really sharp paring knife for similar results.
- Cherry-Nut Crumble Cake Coffee, tea and my favorite thing – coffee cake with crumbles of nutty topping and moist, sweet cherries in the middle. Yum!
- Cherry Filling Chop the cherries on a board with a sharp knife and place them into a bowl. Stir in the sugar and orange zest.
- Walnut Streusel Place the flour, walnuts and brown sugar into the bowl of a food processor. Pulse briefly to combine. Pour in the melted butter and pulse 2 or 3 more times.
- Batter Preheat the oven to 350°. Coat a 9-inch square cake pan with vegetable oil spray.
- Whisk together flour, cinnamon, baking powder, baking soda and salt in a bowl. Use an electric mixer to combine the butter and sugar until fluffy. Stir in the eggs. Spread half of the batter into the pan.
- Drain excess juice from the cherry filling and spoon onto the batter. Dollop the remaining batter over the top and spread with a spatula to somewhat cover the cherries. This doesn't have to be perfect! Run a knife through the batter to swirl everything together. Sprinkle the streusel on top. Bake until the coffee cake is golden brown and a tester inserted into the center comes out clean, about 55 to 60 minutes.
My favorite cherry pitting tool is designed to take care of your olives too. Another popular brand –and you'll know it when you see it – pits several cherries at a time. If your pitter goes missing, don't despair. Place the cherry onto your cutting board and use the flat blade of a large knife, and your hand, to smash-out the pit. It works!

Neighborly Grace
- THE PRESENTATION: Style the serving area with a foundation of rustic warmth by placing the warm muffins directly onto a thick, blue-and-white checkered kitchen towel draped over a distressed white oak sideboard. Position a hand-carved pecan-wood serving board right alongside, flanked by a stack of mismatched, hand-thrown ceramic side plates in soft shades of sage green and butter cream. Scatter a few sprigs of fresh mint and edible blossoms around the serving area to complement the dish's flavor. A simple stoneware pitcher filled with freshly cut garden wildflowers provides a natural, unpretentious center point that welcomes guests.
- THE POUR: To harmonize with the warm baking spices and rich fruit notes of the Carrot, Zucchini, and Apple Muffins, we recommend a sweet, sparkling Moscato d'Asti or a rustic, semi-dry artisanal French hard apple cider. These beverages offer notes of sweet apricot, honeyed orange blossom, and crisp red orchard apple that mirror the sugars and spices while providing a lively carbonation. Serve chilled at 40°F in a crystal coupe. For a non-alcoholic alternative, offer a sparkling spiced apple cider simmered with star anise, Ceylon cinnamon, and fresh orange rind, served at 42°F in a chilled highball glass. The warm baking spices and bright apple sweetness create a comforting sensory harmony.
- THE VIBE: Set the mood by dimming the dining room lights to a warm, candlelit glow, letting the flickering flames from beeswax tapers cast soft shadows across the table. In the background, curate a playlist featuring the acoustic warmth of Norah Jones, the nostalgic piano melodies of Vince Guaraldi, and the soft jazz rhythms of Stan Getz, kept at a volume that encourages intimate conversations and gentle laughter. The physical atmosphere is enriched by the scent of cinnamon-honey steam and the natural woodsy aroma of the fireplace. With a party of eight snugly gathered around the table, the space feels like a sanctuary of comfort and welcoming grace.
