Ingredients

  • 1 cup whole milk, room temperature
  • ½ cup butter, room temperature, 1 stick
  • 3 large eggs
  • ½ cup granulated sugar
  • 4 ½ cups unbleached, all-purpose flour
  • ½ teaspoon table salt
  • 2 ½ teaspoons dry active yeast
  • 1 pint fresh raspberries
  • 6 ounces bittersweet chocolate, chopped, about 1 cup
  • ¼ cup granulated sugar
  • Juice of ½ medium orange, about 2 tablespoons
  • Zest of ½ medium orange, about 1 teaspoon
  • 1 teaspoon cornstarch
  • 2 tablespoons cream, for baking

Glaze

  • 1 cup confectioners' sugar
  • Juice of ½ medium orange, about 2 tablespoons
  • 1 tablespoon heavy cream
  • 2 cups unbleached all-purpose flour
  • 1 cup pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon table salt
  • ½ cup butter, melted, 1 stick
  • 1 cup granulated sugar, plus more for sprinkling
  • 3 large eggs
  • ¾ cup milk
  • Juice of ½ large orange, about 3 tablespoons
  • Zest of ½ large orange, about 2 teaspoons
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries

Instructions

  1. Place the milk, butter and eggs into the bucket of a bread machine. Add the sugar, flour and salt. Place the yeast into the yeast compartment, or make a well in the flour depending on your machine. Set the machine on the dough cycle.
  2. Chocolate-Raspberry Filling Toss the raspberries with the chocolate, sugar, orange juice, zest and cornstarch.
  3. Preheat the oven to 400°. Coat a 13 x 9 x 2-inch baking dish with vegetable oil spray. Turn the dough out onto a lightly floured work surface. Use a rolling pin to roll the dough out to a large rectangle, about 12 x 24-inches with the longest end horizontally across your board. Use extra flour so that the dough does not stick to the board or to the rolling pin.
  4. Spread the raspberry filling out over the dough. Roll up the dough over the filling to form a 24" log. Cut the log in half, and then in half again. Cut each piece into 3 (2-inch) slices, yielding 12 rolls. Place each one, cut side down into the baking dish.
  5. Cover the rolls with a towel and let them rise until they are puffy, about 2 hours, or you can cover the rolls with plastic wrap and put in the refrigerator overnight to bake the next day. Brush the rolls with cream, and place into the oven.
  6. Bake until they are golden and the chocolate filling begins to melt, about 20 to 25 minutes. Remove the dish from the oven.

Glaze

  1. Whisk together the confectioner's sugar, orange juice and cream until the glaze is thick yet pourable. Drizzle the glaze over the warm rolls.

  6. Drop the batter into the lined muffin cups using a 3-inch ice cream scoop. Sprinkle the tops of the muffins with sugar. Bake until the muffins are golden and a tester inserted into the center comes out clean, about 25 to 30 minutes. Cool in the pan for 5 minutes and then remove the muffins to a rack.
