Ingredients

  • 1 cup homemade or prepared mayonnaise
  • 2 ounces, blue cheese, crumbled
  • 2 to 3 drops hot pepper sauce
  • ⅓ pound bacon, about 6 slices
  • 6 thick slices artisanal bread
  • 3 red leaf lettuce leaves
  • 1 large ripe heirloom tomato, cored and sliced
  • 1 large chicken breast, roasted, bones and skin removed, diagonally cut into 1-inch slices
  • ½ teaspoon kosher salt
  • ½ teaspoon coarse black pepper
  • 1 medium whole ripe avocado, pitted, peeled and sliced
  • 1 large hard cooked egg, peeled and sliced

Instructions

  1. Whisk the mayonnaise and blue cheese together until smooth. Whisk in as much hot pepper sauce as you like.
  2. Sammies Cook the bacon in a skillet over medium heat. Use a splatter screen if you have one. Remove the bacon to paper toweling to drain.
  3. Lay the bread onto your work surface. Spread the blue cheese mayonnaise over 1 side of each slice. Layer 2 pieces of bread with a lettuce leaf, tomato slices and slices of chicken. Season with salt and pepper. Top each with a slice of bread – mayo side up.
  4. Top the second layer of bread with slices of avocado, hard boiled egg and bacon. Top each with the remaining bread – mayo side down. Wrap the sandwiches in parchment paper and store until ready to serve.

To roast chicken breasts, rinse the breast and pat dry. Preheat the oven to 425°. Lay the breasts onto a baking sheet with lip. Season with salt and pepper. Drizzle with olive oil. Place into the oven. Reduce the oven temperature to 375°. Roast for 20 to 25 minutes. The chicken is done when you poke it with a fork and the juices run clear.
