Swordfish Kabobs with Kale-Mint Pesto

Ingredients
For the fish
- 1 ½ pounds swordfish steak, cut into 1-inch cubes
- ½ cup tomato juice
- 1 tablespoon Worcestershire sauce
- Zest of 2 large limes, about 1 tablespoon
- Juice of 2 large limes, about ¼ cup
For the Pesto Base
- 1⁄3 cup pine nuts, toasted
- 3 cups baby kale leaves
- ½ cup parsley leaves
- ½ cup mint leaves
- 4 garlic cloves, peeled
- 2 ounces Parmesan cheese, grated, about ½ cup
For the Pesto Dressing
- ½ cup olive oil
- 1 teaspoon salt
- ½ teaspoon coarse black pepper
For the Kabobs
- 1 pint baby heirloom tomatoes
Instructions
- Soak 8 (8-inch) wooden skewers in a bowl of cold water for at least 30 minutes. Place the swordfish cubes into another bowl. Marinate in tomato juice, Worcestershire sauce, lime zest and lime juice while you prepare the pesto.
- Place the pine nuts, kale, parsley, mint, garlic, and Parmesan into the bowl of a food processor.
- Pulse to combine. With the machine running, slowly pour the olive oil into the bowl.
- Season with salt and pepper and pulse again. The pesto should be the consistency of thick paste.
- Heat a grill pan over medium-high heat.
- Season the swordfish with salt and pepper. Thread the fish cubes onto the skewers alternating the pieces with tomatoes.
- Grill, turning once until the fish is just cooked through, about 3 to 4 minutes total. While the fish is still warm, brush a spoonful or more of pesto sauce on all sides.
