Blueberry Crumble Parfaits
Layering fresh, lemon-zested blueberries with creamy blueberry yogurt and a homemade maple-cinnamon oat granola creates a beautiful harmony of textures and flavors. Baking the rolled oats, almonds, and pumpkin seeds until golden-brown yields a delightfully crunchy granola that contrasts perfectly with the smooth yogurt. Ingredients
For the blueberries
- 1 pint fresh blueberries, about 2 cups
- Zest of ½ medium lemon, about 1 teaspoon
- 1 teaspoon natural cane sugar
For the Granola Syrup
- 1⁄4 cup brown sugar
- ½ cup white grape juice
- 1⁄4 cup maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
For the Oat and Seed Mix
- 2 cups old-fashioned rolled oats
- ½ cup sliced almonds
- ¼ cup roasted pumpkin seeds
- ¼ cup roasted sunflower seeds
- ¼ teaspoon kosher salt
To Mix In
- 1 cup dried blueberries

Instructions
Macerate the blueberries
- Place the fresh blueberries into a bowl.
- Stir in lemon zest and cane sugar.
- Place the bowl onto the counter to allow the berries to absorb the flavors.
Make the oven and pan
- Preheat the oven to 325°.
- Line a rimmed baking sheet with parchment paper.
Make the granola syrup
- Whisk together brown sugar, white grape juice, maple syrup, cinnamon and nutmeg in a saucepan over medium-low heat.
- Cook until the sugar is dissolved and syrupy, about 3 to 5 minutes.
Make and bake the granola
- Place the oats, almonds, pumpkin seeds, sunflower seeds, and salt into a bowl.
- Pour the warm syrup over the oats and seeds.
- Toss and then spread into the baking sheet.
- Bake for 20 minutes.
- Remove the baking pan from the oven.
Finish baking and cool
- Stir in the dried blueberries.
- Bake until the oats are golden, about 10 to 15 minutes more.
- Remove the baking sheet from the oven and cool. The granola will crisp up as it cools to room temperature.
Layer the parfaits
- Assemble the desserts in small (3 to 4-ounce) mini-mason jars, shot or juice glasses. Start with a layer of granola. Dollop blueberry yogurt over top.
- Top with the fresh berries. Continue layering, ending with yogurt and fresh berries.
- Top with a bit of fresh mint. You can refrigerate the desserts for up to 24 hours.
- Bring to room temperature before serving. Alternatively, you can layer the dessert in a clear bowl or trifle dish.
You can find seeds and nuts already roasted and salted or you can purchase them raw and toast them yourself. Spread seeds and nuts on a baking sheet. Sprinkle with just a bit of fine salt. Bake at 325°until just beginning to turn golden and smell fragrant, checking every several mi nutes.
