The Strategy:

A Creamsicle Fizz is a non-alcoholic mocktail of vanilla-orange syrup, fresh orange juice, and sparkling water, with cold half-and-half poured in last. The order is the recipe. Build and stir the citrus base first, pour it over ice, and only then add the cream — slowly, so it swirls down through the bubbles instead of blending in. Stir it together and you get a flat orange drink; let it drift and you get the thing everyone remembers from the side of a truck.

There are flavors that go straight past the palate and land somewhere in a childhood summer, and orange-and-vanilla is the most reliable of them. The trick to serving it at a party is keeping it a drink — light, bubbly, and cold — instead of letting it collapse into a milkshake.

Vanilla and Orange Zest, Steeped Together

Wide strips of orange zest taken off with a vegetable peeler carry the fragrant oil and none of the bitter pith, and they steep into a simple syrup while it cools. If you use a split vanilla bean, add it to the hot syrup and give it twenty minutes; if you use extract, stir it in only after the syrup has cooled a little, because heat drives the vanilla straight off. Pour the Cream Last, and Slowly

Fill the glasses halfway with ice and pour the citrus base in first, leaving about an inch at the top. Then pour roughly two tablespoons of cold half-and-half into each glass in a slow stream and stop. Do not stir. The cream will find its own way down through the carbonation in ribbons, and it keeps drifting while the glass is carried to the table. That drifting swirl is the whole visual; a spoon destroys it in a second.

Vanilla-Orange Simple Syrup
  • 1 cup granulated sugar
  • 1 cup water
  • Zest of 1 large orange (removed in wide strips with a vegetable peeler)
  • 1 teaspoon pure vanilla extract (or 1/2 vanilla bean, split lengthwise)

  • 1/2 cup Vanilla-Orange Simple Syrup
  • 1 cup chilled fresh orange juice
  • 2 cups chilled sparkling water
  • 1/2 cup cold half-and-half
  • Ice
Garnishes
  • Orange wheels
  • Maraschino cherries
  • Whipped cream (optional)
  • Colorful paper straws

Method
 

Vanilla-Orange Simple Syrup
  1. Combine the sugar, water, and orange zest in a small saucepan over medium heat. Stir until the sugar dissolves completely. Bring just to a gentle simmer, then remove from the heat.
  2. If using a vanilla bean, add it now and allow the syrup to steep for 20 minutes. If using vanilla extract, stir it in after the syrup has cooled slightly.
  3. Strain out the orange zest (and vanilla bean, if using). Cool completely before refrigerating. Store in an airtight container for up to 3 weeks.
Preparation
  1. Fill four tall glasses halfway with ice.
  2. In a pitcher, combine the Vanilla-Orange Simple Syrup, fresh orange juice, and sparkling water. Stir gently to preserve the bubbles.
  3. Pour into the prepared glasses, leaving about an inch of space at the top.
  4. Slowly pour about 2 tablespoons of half-and-half into each glass, allowing it to swirl naturally through the bubbles to create the signature creamy effect.
  5. Garnish with an orange wheel and a maraschino cherry. For an extra-special treat, finish with a small swirl of whipped cream. Serve immediately.
