The Strategy
A board sauce flavors your steak right on the cutting board. Put the hot steak onto garlic, fresh herbs, olive oil and butter, and as it rests it absorbs all the flavors you've put on the board. Every bite picks up a little of the roasted garlic, the butter and the herbs.
Technique Summary
Chop roasted garlic and fresh herbs like rosemary and thyme right on your board, add a little olive oil, some butter, salt and pepper, then flip the hot steak through it, tent it, and let it rest for five minutes.
Chef's Checkpoints
- Chop the herbs as finely as you want. The butter melts as soon as the hot steak hits the board.
- Push the steak down and flip it a few times so both sides pick up the flavors.
- Tent it and let it rest five minutes before you slice it.
