- 2 cups unbleached all-purpose flour
- 1 cup whole wheat flour
- 1 cup old-fashioned rolled oats
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 3 large eggs
- ½ cup organic unsalted butter (1 stick), melted
- ¾ cup milk
- 2 tablespoons maple syrup
Instructions
- Preheat the oven to 375°.
- Line a 12-cup muffin pan with paper liners.
Make the crumble
- Make the crumble by whisking the granulated sugar, brown sugar, cinnamon, and salt together in a medium bowl.
- Whisk in the butter until well combined.
- Stir in the flour and chopped pecans until the crumble mixture just resembles a thick dough.
Make the muffins
- For the muffins, place the apples, brown sugar, granulated sugar, and maple flavoring into a small bowl.
- Stir to coat the apples.
